APPLE CINNAMON SQUARES

Apples are plentiful now and some of you may be lucky enough to have them in your garden. You will be looking for new recipes and this is one of the easiest and most convenient. Eat it warm as a pudding with cream or custard, or cold as delicious little cakes. You will need a 20cm/8in shallow square tin

Ingredience

Base

  • 300g (10oz) plain flour
  • pinch salt
  • 150g (5oz) butter
  • 110g (4oz) caster sugar
  • 1/2 teaspoon cinnamon

Topping

  • 2 - 3 medium cooking apples
  • 25g (1oz) caster sugar
  • 1/2 teaspoon cinnamon
  • 50g (2oz) butter

Method:

Grease the cake tin. Heat the oven to Gas 6/200C.

Rub the butter into the flour and salt, stir in the sugar and cinnamon.

Using the back of a tablespoon, press the mixture firmly into the base of the tin.

Peel, quarter and neatly core the apples, cut into fairly thin slices and arrange them overlapping in 3 rows over the surface.

Topping: Mix together the sugar and cinnamon; sprinkle evenly over the apples. Melt the butter and spoon it over the top.

Bake for approximately 35 minutes or until golden. Allow it to cool for a few minutes before cutting into squares or slices.

Serve warm or cold.

This is good to take on a picnic carried in the tin.
