PLUM AND CINNAMON SQUARES

This is the time for plums and this recipe is a lovely one to make good use of them. The base is an easy light scone orange-flavoured scone mixture, covered with plums and a crunchy cinnamon topping.

You will need a shallow rectangular tin measuring 26 X 16cm (10 ½ X 6 ½ in) across the base.

INGREDIENTS

  • 450g (1lb) plums
  • 225g (8oz) self-raising flour
  • 75g (3oz) butter or hard margarine
  • 40g (1 ½ oz) caster sugar
  • zest of one large orange
  • 1 small egg
  • 2 – 3 tablespoons milk
  • Topping
  • juice of the orange
  • 40g (1 ½ oz) soft brown sugar
  • 1 level teaspoon cinnamon
  • 40g (1 ½ oz) butter

METHOD

Heat the oven to Gas 6/200C. Grease the tin.

Halve the plums and cut them into thick slices

Rub the fat into the flour, stir in the sugar and orange zest. Beat the egg with a fork, make it up to 4 fl oz with the milk and mix into the flour with a knife to make a soft dough. Don/t knead the dough, just roll it out lightly to the size of the tin, place it in the tin and press flat.

Arrange the plums over the surface and sprinkle with the orange juice. Mix together the sugar and cinnamon, sprinkle over the plums, melt the butter and pour it over the top.

Bake for approx 25 minutes or until the plums are soft and you can see that the scone mixture is firm. Allow to cool before cutting into squares. Eat warm or cold.

This is delicious served with cream or crème fraiche.
